Abstract (EN)

Free radicals formed by various biochemical process in the organism can react with biomolecules and cause aging, cardiovascular diseases, diabetes, various types of cancer and nervous system diseases. Antioxidants prevent free radicals from damaging cells by interacting with them. Natural antioxidants are taken to the body through plants through diet. The most important element of the local cuisine is the herbaceous plants in Giresun, which is one of the provinces where the average life span is long. The aim of this thesis is to determine the total phenolic content and antioxidant properties of the extracts obtained from different tissues of Ornithogalum umbellatum called Sakarca, which is one of the most commonly consumed plants in Ordu-Giresun region. Plants used in the study were obtained from Bulancak district of Giresun province. Total phenolic content of plant extracts, total flavonoid content, FRAP activity, CUPRAC activity, DPPH radical scavenging activity and the effect on extracts on H2O2-induced erythrocyte cells; inhibition of lipid peroxidation capacity, total thiol (-SH) levels, protein carbonyl levels, of protein oxidation markers in the erythrocyte cell membranes were determined. Total phenolic content, total flavonoid amount, CUPRAC activity was found in the highest leaf extract, lipid peroxidation was found in the working environment with the highest leaf extract capacity. FRAP activity, DPPH radical scavenging activity and the highest flower extract, protein carbonyl formation was found in the study environment where the highest flower extract. The total thiol level was highest in the onion extract. These results indicate that leaf and flower tissues of the plant have some levels of antioxidant effect and maintain these activities in cellular environment. Therefore, it can be said that Sakarca plant may have inhibitory effect on cell destruction and aging. Key Words : Sakarca, Ornithogalum umbellatum, free radical, antioxidant capacity
