Cynara scolymus (Sakız and Bayrampaşa) and Cynara syriaca (1 branched, 7 branched, 14 branched, 21 branched and 28 branched) types were used as vegetable material. Determination of active ingredient contents in leaf samples belonging to different types and types of artichokes was performed. In the plants belonging to both species, number of heads, number of branches, being spiny, number of seeds, seed weight, leaf shape, bract color, bract shape, fresh leaf weight, dry leafweight, biomass, total head weight, head weight/head count, number of heads/branches, activeıngredient/head weight, active ıngredient/number of heads, number of active ıngredient/number of branches, seed weight/head weight, head weight/number of branches and number of seeds/number ofbranches were examined. At the end of the research; In contrast to the expected artichoke varieties were found to be richer than the Cynara syriaca species. Active ıngredient/number of branches, active ıngredient/head weight, active ıngredient/number of heads, seed weight/head weight, head weight number of stems, fresh leaf weight, dry leaf weight, biomass, leaf shape, bract color, top of bract color, being spiny, barbed Cynara syriaca types are higher in terms of number of branches and number of heads, seeds, seed weight, head weight/head count, number of heads/number of branches and number of seeds/number of branches and Cynara scolymus cultivated varieties (Sakız and Bayrampaşa) have been found to have superior values.
