Abstract (EN)
Lipoxygenase catalyzes the specific addition of molecular oxygene to polyunsaturated fatty acids (containing the cis, cis-l,4-pentadiene moiety) to formation cis,trans-conjugated diene hydroperoxides. This primary products can be converted to hydroxy acids which are industrially important fatty acids. In addition to industrial! importance, lipoxygenases have physiological effect on specific tissue hormones, such as leukotriens. In this study, soybean lipoxygenase was immobilized on polyacrylamide gel which activated with glutaraldehyde. Optimal temperature, optimal pH, Vmax and Km value were determined for free and immobilized enzyme. Besides these, reusability and storage stability of immobilized enzyme were investigated.Key Words: Soybean Lipoxygenase type-1, Linoleic acid, Polyacrylamide Gel, Immobilization.
