Abstract (EN)
In this study, it was aimed to determine the sunn pest (Eurygaster Integriceps) damaged wheats and their wheat flours characteristics, establishing detrimental factors, negativeness and it had been tried to how much improvement can be obtained by using of additives during dough and bread making and/or by making modifications at processing conditions.Wheat technique worth criterions had been decreased by the increase at the percentage of sunn pest infected kernels in wheat samples. Increase at the ratio of infected kernels in wheat samples did not effect negatively on dough and bread quality at a certain proportion (2%). But when the percentage of sunn pest damaged kernels in wheat samples were more than 2% and depending on increase of percentage, dough and bread characterictics showed significant decrease. Bread quality parameters were improved significantly by using of additives. Among these additives, especially transglutaminase showed the most effective additive on bread quality, while L-ascorbic acid (L-AA) improved the quality of bread obtained from the samples that have low ratio of sunn pest damaged wheats. L-AA did not sufficiently improve the quality at highly infected wheats. In bread making from sunn pest damaged wheat flours, mixing and fermentation conditions had significant effects on dough and bread quality. It was suggested that the shorter mixing and fermantation time, and lower dough and fermentation temperature must be preferred. When sunn pest damaged wheats blend with sound wheats, harm of sunn pest was relatively decreased. By adding appropriate additives to wheat blends and making proper modifications in bread production process it was found that bread can be produced with high quality. In this respect, wheats which were damaged from sunn pest can be acquired again to the economy. In addition, it was determined that the sunn pest saliva contains not only protease, but also amylase.
