An efficient and effective supply chain management is the topic of many studies in the literature. The most common performance tool efficiency and productivity measured is the level of waste in integrated supply chains for most sectors. Retail sector is one of these sectors. Products with the cheaper prices become more attractive because of the increases on price and decreasing purchasing power. Therefore, the retail sector needs to know the profile and the needs of the customers in order to ensure customer satisfaction with the goods and services they offer to the public. It leads to a waste of product if the supply is more than demand. On the other hand, producing less products than demand leads to customer dissatisfaction. Thus, it is very important to produce right amount of product by supply chain partners. The aim of this thesis is to forecast daily demand of a folk-bread point of sale with different demand forecasting methods and to determine a robust forecasting technique for the supply chain since folk bread is such a commodity that is very attractive to many people. The contribution of the study is to fill the gap about demand forecasting for folk bread. The other contribution is that the study is an example for local managers about demand forecasting for different commodities.
