Abstract (EN)
In the study, the olive oil sector and marketing organization for 2017-18 production year were examined by using data collected from farms, processers and intermediaters in TR22 Region of Turkey. As a result of the study, it was calculated that 23 899.73 kg of olives and 3 891.09 kg of olive oil were produced per farms. While the highest rate in farming expenses were labor cost as %33.90. As of the 2017-18 production year, the production cost of 1 kg olive was calculated to be TL 1.88. The ratio of land capital to assets was examined as %60.50, the amount of assets per farm land was 26 693.58 TL and the equity ratio of farms was %97.82. The ratio of gross production value was the amount of assets per farm land was 92 716.81 TL and it constitutes %93.06 of the gross product. The pure product value was 1 430.32 TL and it constitutes %52.93 of the gross product. Profitably was found to be 52.83, Economic Profitably 5.35 and Financial Profitably 5.24 in enterprises. The companies processing olives in the research area have been working with %57.42 efficiency and an average of 704.22 tons of grain olives are processed per year. It is determined that %20.00 of the enterprises still export but %9.00 of them left exporting. Intermediary enterprises have a market share of %47.57 in grain olives and %40.54 in olive oil. The farms prices within retail prices %98.36 in oilseed olives and %51.16 in olive oil. In the logistic regression analysis made on the model established with 8 independent variables in determining the reasons affecting the PP value of the enterprises; the most important variables were the amount of olive oil production, education level of agricultural operator and land slope. As a result of the analysis, it has been concluded that the enterprises have problems in the income cycle as a result of the fact that they are in a single production activity, high labor costs due to periodicity and sloping land structure and price fluctuations in the market. In the solution of these problems, it was concluded that it would be beneficial for the operators to turn to olive oil instead of olives for oil in marketing, to include alternative agricultural production activities, to increase low-interest loan applications to enterprises, to control market prices in olive oil and to encourage mechanization.
