Abstract (EN)

Turkey; As it is home to many civilizations, empires and states, it has a significant gastronomic accumulation, history and potential.This wealth and accumulation are not on the same level with Turkey's gastronomic tourism.Gastronomy tourism is growing at a significant level in recent years in the world and Turkey.An important factor affecting the motivation of tourists who want to visit the destination is gastronomy.The location of local is extremely important for the development of gastronomy tourism..Gastronomy maps are comprehensive tools that include famous dishes, local dishes, geographically marked products, and gastronomic festivals of the destinations that tourists visit or plan to visit.Gastronomy maps contribute to the promotion, marketing and sustainability of local flavors of the region or location.In this thesis, document analysis technique was applied by making use of secondary data sources.334 gastronomic festivals organized in provinces and districts were determined and examined in 7 tables and 7 density maps and routes. Geographical marked products of the provinces, 144 origins and 207 mahram marked products were determined and examined in 21 tables and 2 density maps.Famous in Turkey; 367 soup, 44 kebab 260 non-kebab meat dish, 127 seafood and fish, 76 cakes, pastry and sweets, 18 milk products and cheeses, 47 drinks, 37 wine, 114 unprocessed and processed fruit and vegetable products were determined and examined in 10 density maps and routes.
