The dictionary of meal names

One of me basic needs of human being is also nutrition. Nutrition and food and its kinds, which develop paralel to nutrition, are a necessary need to continue human being?s life.Nutrıtıon and the other several factors about it has formed, changed and developed depending. The places human being lived in and time. Human being?s life style effected this case as well. After the stable life style, the nutrition and food culture of each nationality apperared in accordance with their geographical and cultural conditions.The most important factor of forming the Turkısh nutrition culture is the geography and cultural features which the Turks rule over. Previously, related to their livelihood, meat had emphasis on nourishment culture basis of the Turkish who had a nomadic life style. Grain became one of the basis of Turkish nutrition with their having a sedentary life in time. We can see the best example of this in "Divan-ı Lügatit Türk" written by Kaşgarlı Mahmut. We see a lot of meal names. Also, Yusuf Has Hacip mentioned about table and eating customs in "Kutadgu Bilig".Turkish cuisine is not only from Middle Asian origin; but also, a mixture from Caucasia to The Balkans, from the Crimea to Mesapotomia, to East Mediterian Sea area. This mixture comes from Ottomans. As we see in the sources, Ottoman cuisine was a unite all by itself. Especially, in the time of Sultan Mehmet the Conqueror, workers in the kitchen and meal kinds are proofs of this. As a result, Ottoman palace cuisine was composed. We witness that Anatolian Turkish cuisine still keeps itself alive. Surely, each region and vicinity has meals special to itself. Even meal names are mentioned with vicinity names: Adana Kebap, Harput meatball...Turkey has meal kinds defers from region to region, even from city to city. Maize and anchovy in Black Sea Region, grain and meat in Middle Anatolia, weed and olive oil in Aegean Region have emphasis on nourishment.But it shouldn't be forgotten that peculiarities symbolizing the regions are depenedent upon the geography and livelihood of people in that region.Meal names that we determined are formed with one word or phrases. Most of the names that are simple, multiplied and compound are Turkish. However, there are foreign meal names, mostly from Arabic and Persian languages. Meal names in phrases are mostly Turkish and foreign meal names.Some meal names whose names known by only one region's people and that used in only one region have different meanings in different regions.Determination of more than thousand meal names; variety of meals that is an improtant part of Turkish culture evidence that Turkey has a rich meal culture.Key words: Turkey Turkish Dialects, meal names, nourishment culture of the Turkish, dictionary.
