It is one of the most important processes for food production all over the world and in our country. This enables the food industry to grow rapidly in response to the needs and demand imbalance around the world. The food industry, which is an important part of the industrial and employment fields in our country and in the world, also constitutes a significant part of the financial transactions that take place around the world. With the growth of the food industry and the growth of demand increasing markets, it has become important to prevent the deterioration of food and quality, the main problems of food production, and to deliver reliable food to consumers. Significant developments are being observed today in the name of solution of these problems. By constantly improving production, storage and transportation technologies, measures have been taken to prevent and address problems encountered in food production and logistics (such as food spoilage, quality losses, breakdown in the cold chain due to lack of logistics, etc.) Cooling is done to prevent microbial deterioration or quality losses cooling process is being carried out. This process also increases the shelf life of food. Cold chain logistics is the whole process of storing, handling and transporting refrigerated or frozen food products at the required temperatures and is of great importance in terms of food reliability. In terms of consumer health and economic value, it is necessary to have products in proper conditions (temperature, time, etc.) from raw material to final product and there should be no temperature changes along the cold chain. These requirements and control are of great importance for commercial and human health. For this reason, international agreements such as "International Carriage of Detrimental Foods" and the "Treaty on the Use of Special Equipments in Transport" (ATP Treaty) have been put into effect and standards have been established for both food production and food logistics. The ISO 22000, BRC and IFS standards prepared by the HACCP system for production and logistics are currently being implemented by the food industry and play an important role in ensuring food safety and preventing economic losses. Agreements, standards, local laws and regulations are constantly being developed and updated. Fully satisfying food reliability throughout the supply chain and minimizing economic losses by adapting to emerging technology possibilities are among the key objectives of the local and global food industry in the coming years. In today's and future cold food logistics and cold transportation, the concept of lean production is gaining importance. In this study, the concepts and principles of lean manufacturing were examined and it was decided to create an application by using the value flow mapping method. In the value flow mapping method, unnecessary stocks, overproduction, pointing out the wasted points and observing the processes transparently are the improvements that can be realized in the process. After these examinations, a frozen meat factory was selected and value flow mapping application was performed. The application started by selecting the product family first, followed by the drawing of the current status value flow chart. Details of the production activities related to the present situation have been determined and the improvements to be made regarding the future situation have been determined. A new value flow map was created for the future situation by simplifying the production processes, minimizing the effect of the workplace regulation and the non-value added production phases.
