Weight loss, color (L*, a*, b* C* and Hue), in - package gas components (O2, CO2 and N2), protein, total phenolic content, total antioxidant activity, catalase, polyphenoloxidate (PPO) respiration rate and external ethylene content were determined at harvest and 5 days intervals following harvest. When examined all parameters were taken into consideration in the study, it was found that edible coating material which gives the best result is agar in white button mushroom (Agaricus bisporus) which was storaged +4 °C and 90-95 % relative humidity conditions during 20 days.
