Effect on intention of ethnic food and local food consumption in the destination of perceptions gastronomy image and neophobia of local consumers

In this thesis, it is aimed to be tested with a quantitative research design of the model established to examine whether local consumers' perception of national cuisine and food neophobia have an effect on the intent of local destination and ethnic food consumption. According to purpose of the study, a literature review was made and the variables selected in the study were examined in detail. The data were obtained through the survey method, and the survey was conducted between 1 January 2020 and 1 March 2020 with 384 participants residing in Antalya province. As a result of the analysis of the data obtained within the scope of the research, the gastronomy image of the local consumers is positive, but the food neophobia is neutral. It has also been identified that the food neophobia and the image of gastronomy has a significant effect on the intent of local destination and ethnic food consumption. It was determined that the effect of food neophobia on ethnic food consumption intention was higher than that of local food consumption intention in the destination.
