Abstract (EN)
Acrylamide is used as a chemical substance in polyacrylamide based materials. Polyacrylamide is used in improvment of drinking and waste water, as adhesive in paper and cosmetic industry. While some food are prepared at high temperatures, acrylamide is formed. It is known that acrylamide has neurotoxic effect on human and animal. Acrylamide has been defined as a cancerogenic substance by International Agency for Research into Cancer. This study was carried out to investigate the effects of different doses of acrylamide on levels of glutathion (GSH), hemoglobin (Hb), albumin and Na+-K+ ATPase of erythrocyte membrane. It is found that when the bloods were treated with acrylamide GSH, Hb and albumin levels and Na+-K+ ATPase on the erythrocyte membrane were all decreased.
