Abstract (EN)
With valuable seed, Almond (Prunus amygdalus Batsch) is a species commonly grown everywhere of Turkey outside of the Eastern Black Sea Reagion. In this thesis, 32 different almond individuals? seeds that collected from natural distribution areas that Eastern and Southeastern distribution areas of the species storage proteins (albumin, globulin, prolamin and glutelin), ADEK vitamins and fatty acid compositions were studied.After protein subfractions obtained, using the technique of 12 % percent sodium dodecyl sulfate poliacrylamide gel electrophoresis (SDS-PAGE), protein band profiles and molecular wights of the bands were determined. Because the prolamin amount, less than 1 %, bands not formed about this proteins. Protein subfractions band profiles of almond samples were evaluated together and phylogenetic relationships of the samples put out.Gas chromatography used for analyses of fatty acids and HPLC equipment used for determining of ADEK vitamins. Analysing by fatty acids, palmitic acid (16:0) 5.34 %, palmitoleic acid (16:1) 0.70 %, stearic acid (18:0) 0.85 %, oleic acid (18:1) 74.46 %, linoleic acid (18:2) 17.89 % and linolenic acid (18:3) 0.75 % were found. Besides these, essential fatty acid groups and rates of these groups to each other were determined.In the almond seed, ADEK vitamins, especially vitamin E mainly found in large quantities. In terms of average values, ?-tocopherol 21.80 mg/100 g were found. According to the ADEK vitamins in the almond seeds, the significant differences have been found between the individuals.Key Words: Prunus amygdalus Batsch., seed storage proteins, albumins, globulins, prolamins, glutelins, SDS-PAGE, fatty acids, ADEK vitamins.
