Abstract (EN)

In this thesis study, in order to comparative investigation and the comparative of results in honeydew honey and flower honey in terms of %moisture, pH, acidity, conductivity and sugar components (fructose, glucose, sucrose, maltose) produced in December, January and April in Aegean Region. Honey formation and composition show significant differences with respect to regions and variety of plants. 5 pieces of honeydew honey and flower honey produced by different regions of the Aegean Region in December and January, it was analyzed in February by taking into consideration the waiting times. These honeys produced by the region in April were also kept at room temperature and analyzed in May. As a result of the analyzes, it was determined that the results of % moisture, pH, acidity, electrical conductivity, sugar components (fructose, glucose, sucrose, maltose) were completely different even in honey produced in the same region.
