Biological activity determinations of pepper's in Gaziantep region

Abstract (EN)

Peppers are vegetables of the Solanaceae family and they are a from genus Capsicum. In this study, type of color cayenne pepper green and red chili peppers and red sweet pepper varieties that are grown in Gaziantep which are Latin name Capsicum annuum were dried in the shade. Hexane, dichloromethane, methanol and water extracts of these three kinds of peppers were obtained under appropriate optimization conditions. Oxidant status, antiradical activity, total phenolic and flavonoid content in extracts obtained from different solvents and effect of pepper on DNA protective activity were investigated. Rel Assay Diagnostics kits (TAS, TOS) for antioxidant activity and DPPH assay for antiradical activity were used. PBR322 plasmid DNA and UV_C method were used for DNA-protecting activity. When the results are evaluated, all of Red sweet pepper, Red hot pepper, Green hot pepper samples samples showed protective effect on DNA against hydrogen peroxide and UV_C. In this thesis, The phenolic and flavonoid components of the C. annuum in methanol, dichloromethane, water and hexane extracts were also measured. While the highest amount of flavonoid component has been observed in hexane extract of red sweet pepper, the highest phenolic component value was observed in hexane extract of green hot pepper. When the antioxidant activity results are examined, the best result is determined in green pepper. As a result of antiradical activity measurements, the values of all pepper varieties in dichloromethane solvent were determined as the highest activity. As a result of this study, it has been reaveled that peppers have antioxidant, phenolic and flavonoid contents and active compounds as protective property against DNA.
