Abstract (EN)

In this study, were tried to be determined nitrate and nitrite accumulations and Correlations between a, b and total chlorophyll amounts in the samples taken from spinach (Spinacia oleracea), lettuce (Lactuca sativa L.) and parsley (Petroselinum hortense) sold in Antakya, Samandağ, Kırıkhan, İskenderun, Dörtyol districts of Hatay Province. Nitrate and nitrite accumulations were analyzed in the HPLC. It was determined that nitrate accumulation was highest in the winter season in the spinach, lettuce and parsley samples taken from Dörtyol and İskenderun districts. It was found that nitrate accumulation in lettuce and parsley in Antakya, Kırıkhan and Samandağ districts is highest in summer. It was determined that the highest nitrite accumulation was in winter season in all districts for all three vegetable species. Correlations between nitrate and nitrite accumulation and chlorophyll a, chlorophyll b and total chlorophyll were determined in the spinach samples. In terms of nitrate and nitrite accumulation, it has been determined that spinach can be eaten safely in all districts within the limits given by WHO. Correlations between nitrate and nitrite accumulations and chlorophyll a, chlorophyll b and total chlorophyll were determined in Antakya, Kırıkhan and Samandağ and Dörtyol counties in lettuce samples. Correlations were not detected in Iskenderun district. This difference is thought to be caused by factors such as climate, environment and cultural processes and aquaculture. It has been determined that lettuce samples can be used safely within the limits given by WHO. Correlations were determined between nitrate and nitrite accumulation and chlorophyll a, chlorophyll b and total chlorophyll values in Antakya, Dörtyol, İskenderun and Kırıkhan counties in parsley samples. In Samandağ district, while there was no correlation between nitrate accumulation and chlorophyll values, a correlation was determined between nitrite accumulation and chlorophyll values. It has been determined that parsley can be consumed safely within the limits given by WHO, except for some months. According to the results of our study, it was determined that there are general correlations between nitrate and nitrite accumulation and chlorophyll a, chlorophyll b and total chlorophyll. It has been determined that spinach, lettuce and parsley consumed in the mentioned districts can be consumed safely.
