Determination of some characteristics of pomegranate juice concentrates obtained from the fruits of Hejaz variety

Abstract (EN)
Pomegranate juice concentrates from the fresh fruits of Hejaz variety were prepared in by use of vacuum and open pan concentration in the laboratory. In addition, two samples of home made concentrate were provided from Kilis and Hatay cities. All pomegranate juice concentrate were packaged in small transparent glass jars and amber colored glass bottles at room conditions for 9 months. In order to determine the effects of processing methods and storage conditions various analyses were applied to samples at 3 month-interials. For this purpose, pH, TA, SS, total solids, wateractivity, viscosity, total monomericanthocyanins, anthocyaninedegrationproducts, anthocyaninsubstances, total phenoliccontents, antioxidantactivity, HMF, inevrtsugar, organicacids, mineral contentandsensoryanalysiswerepracticed. Statistical evaluationsshowedthatsomeprocessingapplicationsandstorageconditionssignificantly (p<0.005)affectedsomeparameters of thepomegranatejuicessaples.Keywords: Pomegranate, Pomegranate Juice, Pomegranate Concentrate,Anthocyanin, Acids
