Abstract (EN)

In this study, it was aimed to determine the quality attributes of tomato paste and pepper paste samples belonging to various companies that are offered for commercial sale in canned, glass, pet and bucket packages on marketplace in İzmir city and investigate the conformity of the regulations. The amount of insoluble ash (in KM) from chemical properties in analyzed tomato paste samples is 0,01-0,80%; Total acidity of 2,15-10,56 g / 100g; Sorbic acid 71-136 mg / kg; Benzoic acid 149-926 mg / kg; The ratio of invert sugar to dry matter is 25,50-89,60%; PH 3,61-4,8 and the salt value is changed between 2,27-10,52. In terms of physical analyzes of tomato paste samples, the water soluble dry matter content of the samples is 26,13-37,2 brix; Color value 1,83-2,64; It is observed that the amount of black spot is 1-10 pieces / 10g and the consistency is 2,12-8,05 cm / 30 sec. The amount of insoluble ash (in KM) from chemical properties in analyzed pepper paste samples is 0,01-0,45%; Total acidity of 2,61-6,77 g / 100g; Sorbic acid 79-136 mg / kg; Benzoic acid 160-818 mg / kg; The ratio of invert sugar to dry matter is 34,19-91,60%; PH 3,61-4,82 and the salt value is changed between 2,81-10,18. In terms of physical analyzes of pepper paste samples, the water soluble dry matter content of the samples is 20,05-37,45 brix; Color value 1,60-2,34; It is observed that the amount of black spot is 1,5-11,5 pieces / 10g and the consistency is 3,72-12,45 cm / 30 sec. It is observed that the pH value in 8 tomato paste samples, the amount of salt in 12 samples, the invert sugar value in 4 samples, the total acidity value in 1 sample, the amount of insoluble ash in 1 sample and the benzoic acid value in 3 samples are not in compliance with the legislation. It has been determined that the amount of water-soluble dry matter is not in accordance with the legislation in the case of glass packaging 1 and 3 in the case of tin packaging, and the color value of all the samples is in compliance with the legislation. Besides, It is observed that the pH value in 2 pepper paste samples, the amount of salt in 10 samples, the invert sugar value in 3 samples, the amount of insoluble ash in 1 sample and the benzoic acid value in 1 sample are not in compliance with the legislation.
