The Inhibitory effects on some pathogen bacteria of some yeast and lactic acid bacteria isolated from kefir

Abstract (EN)

The aim of the study is to determine the inhibitor activities of lactic acidbacteria and yeast isolated from kefir on some pathogenmicroorganisms. For this purpose a study is conducted on theantimicrobial activities of Lactobacillus casei, Lactobacillus delbrueckiisubsp. bulgaricus, Leuconostoc cremoris, Enterococcus faecalis,Enterococcus faecium, Candida kefir, Candida famata species isolatedfrom the kefir samples produced in Ankara University Faculty ofAgriculture. 91 pathogen bacteria isolated from clinic cheese and milksamples have been used as indicators. This isolated; 20Staphylococcus (%22), 13 Salmonella ( %14), 3 Shigella (%3), 22Klebsiella ( %24), 11 Enterobacter (%12), 6 Hafnia (%7), 4 Citrobacter (%5), 2 Pseudomonas (%2), 2 Proteus (%2), 1 Listeria (%1), 2 Serratia(%2), 4 Escherichia (%5), 1 Aeromonas (%1) have been ascertained.The antimicrobial activities of Candida species and lactic acid bacteriahave been tested with the well diffusion method. In the study, theCandida famata and Candida kefir yeasts showed their most effectiveinhibitor activity on Staphylococcus species. C. kefir showed the moreinhibitor activity on all isolates in comparison to C. famata showedinhibitor effect on all isolates. On someKlebsiella pneumoniaeisolates, however, inhibitor zone has beenKlebsiella oxytocaascertained. The diameter of the zone formed by C. kefir againstindicator Salmonella typhi, Salmonella paratyphi and Salmonellatyphimurium species ranges between 6 mm and 18 mm. It isascertained that C. kefir ve C. famata showed inhibitor effect onindicator Pseudomonas putida, Shigella flexneri, Aeromonashydrophila, Enterobacter aerogenes, Enterobacter, Enterobactergergoviae, Enterobacter agglomerans, Enterobacter cloacae andProteus mirabilis isolates. In Listeria monocytogenes, Shigella sonneiisolates, however, no inhibitor zone has been formed. In someEscherichia sushes the inhibitor effect of C. kefir yeasts was observed.A big inhibitor zone by Enterococcus faecalis, Enterococcusfaecium bacteria was ascertained on the indicator Staphylococcus,Listeria, Salmonella, Shigella, Klebsiella, Enterobacter, Hafnia,Citrobacter, Pseudomonas, Proteus, Serratia, Escherichia,Aeromonas isolates. The Enterococcus faecalis, Enterococcusfaecium bacteria showed similar antimicrobial activity on all indicatorisolates. Lactobacillus delbrueckii subsp. bulgaricus, Lb. casei,bacteria isolated from kefir showedLeuconostoc cremorisantimicrobial activity on all indicator isolates. The most effectiveantimicrobial activity of Lactobacillus delbrueckii subsp. bulgaricusbacterium was ascertained on indicator Listeria monocytogenes andStaphylococcus isolates. Lactobacillus delbruckeii subsp. bulgaricusand Leuconostoc cremoris bacteria showed a very low enzyme activityon Pseudomonas putida isolates. The effect of Lb. casei on indicatorShigella, Proteus, Serratia isolates was observed. Leu. cremorisshowed effective inhibitor activity on indicator Staphylococcusisolates.
