Abstract (EN)
In this study, the general mould flora of tomato fruits were collected from a total of the ten tomato fields in two town of Manisa province and tomato paste produced from them was tried to determined. For this purpose, tomatoes and tomato paste samples were taken during harvest and after harvest respectively. The isolates from these samples were obtained by the methods of the traditional isolation for moulds. A total of 18 mould species isolated were found to belong to the 7 different genera. These are Aspergillus ( 7 ), Penicillium ( 6 ), Aliernaria (1), Fusarium (1), Mucor(\), Rhizopus (1) and Trichoderma (1). Key Words: Manisa, Tomato, Puree, Mould, Isolation, Aspergillus, Penicillium
