Abstract (EN)

To determination of ascorbic acid (Vitamin C) in color materials, three separate methods for the determination of the spectrophotometric method was developed and the findings of these methods in terms of accuracy and precision with the help of t and F tests were compared with 95% confidence level, statistically evaluated and the methods applied. Using a modified spectrophotometric method and the difference method is applied to ascorbic acid determination in samples of fruits and vegetables, fruit juice, powdered drinks, carbonated beverages, pharmaceutical preparation, baby food and bon bon sugar any separation process were determined. Determination of ascorbic acid in the samples was studied with the sample extracts were prepared by a mixture metaphosphoric acid-acetic acid (3% - 8%) of extraction, centrifugation, appropriate dilution. Samples used in the study developed for the determination of ascorbic acid derivative spectrophotometric method for the first-order derivative spectrum of the derivative of the absorbance value 258nm a minimum, the difference method for the absorption spectrum of the 269nm maximum absorbance value of the modified method for the spectrophotometric absorbance of the minimum 531nm value was used. Derivative spectrophotometric method, the difference method, and modified spectrophotometric method for the measurement curves, respectively, in the range of 2-10 mg.L-1, 2-10 mg.L-1 and 1-10 mg.L-1 concentration was prepared.
