Determination of total phenolic, flavonoid substance, antioxidant and antimicrobial properties of Allium rumelicum, Jurinea kilaea, Peucedanum obtusifolium plants growing in Thrace region

In this thesis, analysis of total antioxidant activities and capacities of Allium rumelicum, Jurinea kilaea, Peucedanum obtusifolium plants growing in Thrace region is planned with CUPRAC, ABTS/Persulfate and DPPH methods. In addition, it is aimed to determine the total phenolic and flavonoid substance contents of Allium rumelicum, Jurinea kilaea, Peucedanum obtusifolium plants using Folin-Ciocalteu and AlCl3/KAc methods. Analysis of the antimicrobial properties of plants will be provided by disc diffusion method. As a result of this study, the highest total antioxidant capacity/activity values analyzed by CUPRAC and ABTS/Persulfate methods were observed in the Jurinea kilaea plant. It was determined that the % inhibition value of the same plant analyzed by DPPH method was the lowest. In determining the total phenolic substance content, Folin-Ciocalteu method was used and it was found that the plant with the highest gallic acid content was Jurinea kilaea. In determining the total flavonoid content by AlCl3/KAc method, the Peucedanum obtusifolium plant had the lowest quarcetin content, while the highest quarcetin content was determined in the Allium rumelicum plant. According to the results of antimicrobial activity analysis obtained by disk diffusion method; Peucedanum obtusifolium plant; it has been determined that it has an effect on 3 of 5 microorganisms studied. Jurinea kilaea plant; while Salmonella enteritidis ATCC13076 was effective only on microorganisms studied, Allium rumelicum plant was found to be effective only on Staphylococcus aureus ATCC6538 from the microorganisms studied.
