Abstract (EN)

In this thesis, it was aimed to investigate the composition of olive oil samples collected from produced in different areas in Turkey namely; sterol compositions, fatty acid methyl esters, trace element composition, 13C/12C isotope ratios and triacylglicerols (TAG). These properties can be exploited to differentiate the olive oils obtained from Aydın, İzmir, Manisa, Bursa, Muğla, Edremit Körfezi between each other by using principal component analysis (PCA) and Cluster analysis. Overall data of the above parameters was compiled to differentiate the olive oil from different areas, even though the olive oil samples imported from abroad. This method developed for differentiation is expected to be used for removing any hesitation for the adulteration in terms of trade concern and to meet consumer demands for high quality olive oil produced in particular geographical region.
