Structured oil production with organogenation method from vegetable oil

Abstract (EN)

In this study, beeswax in varying amounts (3, 6 and 9 %) were added to canola oil samples to produce organogels structured in solid phase and stored at both room temperature and refrigerator conditions (4 and 25 ° C) for 90 days, and the results were compared with commercial reference oil. It was determined that organogelators had a high oil binding capacity over 99 % compared to commercial samples. If the beeswax concentration increased, the crystal formation times decreased. The fastest crystal formation times (7,49 min) were found in sample 9O3 (canola oil containing 9 % beeswax stored for 3 months) which are consideraly lower than that of commercial reference oil. The solid fat content increased when the concentration of wax increased in organogels and the values were lower than the reference oil. It has also been found that when the concentration of beeswax increased, luminosity (L) values of the organogel samples increased. Peroxide and malonaldehyde values of organels were increased significantly during storage. According to the texture analysis, the organogels were found to be more spreadable when compared with the reference oil. In conclusion, this structured oil production method can be used to produces organoles which can be used extensively for different purposes including trans oil-free alternative product for the oil industry due to their lower cost, storage-resistant character with completely liquid oil-based and having good spreadability properties.
