Özet (EN)

In this study, the effects of polyethylene glycol (PEG) formed as a composite with morin and quercetin on Sacchromyces cerevisiae L. against 7,12-DMBA on lipophilic vitamins, antioxidant enzyme levels, fatty acid composition and MDA, GSH, GSSG levels were investigated. In the experimental scope, control, sesame oil, DMSO, DMBA, morin, quercetin, PEG, PEG+DMBA+Morin, PEG, PEG+DMBA+Quercetin groups were created. According to our findings, it was determined that total protein level increased in the PEG250 group formed as a composite of DMBA and PEG with other flavonoids compared to the control group. A decrease was determined in the MDA level in the groups formed as a composite of DMBA, PEG and flavonoids compared to the control group. When the GSH amount was compared to the control group, it was observed that it decreased at different rates in all groups, while the GSSG amount increased. The amount of catalase enzyme was observed to decrease at different rates in the two experimental groups given quercetin and morin and in the groups given sesame oil. According to the results of the fatty acid analysis, although the amount of palmitic acid in the fatty acid composition increased in the DMSO, Morin, PEG groups, it was determined that it decreased in the other groups given morin and in all groups given Quercetin. It was determined that the amount of stearic acid decreased in the DMBA group compared to the control group and the same decreasing trend was observed in the flavonoid group. When the changes in lipophilic molecules between the morin and quercetin groups were examined, it was determined that the levels of K2, -Tocopherol, D2, D3 and ɑ-tocopherol increased in the morin group. A significant increase was observed in the levels of K2, -Tocopherol, D2, D3 and ɑ-tocopherol in the DMBA groups in the pellets given Quercetin. As a result, it can be said that the addition of flavonoids to the culture medium of S. cerevisiae causes cell growth due to the increase in the total protein amount and causes a negative effect on lipid biosynthesis due to the decrease in the palmitic acid amount.
