Synthesis of diacetyl 6-gingerol and comparative determination of its biological activities with 6-gingerol

Abstract (EN)

In this thesis study, using the ginger (Zingiber Officinale Rosc.) plant, 6-gingerol compound was isolated from the plant by chromatographic methods and its structure was determined. This secondary metabolite obtained was acetate and diacetyl-6-gingerol was obtained. Antioxidant, antifungal, antimicrobial tests were performed for both compounds, and also their inhibition effects on acetylcholine esterase, butyrylcholine esterase and α-glucosidase enzymes were studied. An inhibition of 89.7% was observed at the 1000 µL dose of 6-gingerol, and 69.7% at the 800 µL dose. On the other hand, 100% inhibition was determined in 1000 µL dose of diacetyl-6-gingerol and 90.5% inhibition in 800 µL dose. It was observed that the antioxidant potential of the derivative compound was less than the starting compound. Both molecules had less inhibitory effects on the three studied enzymes than standard inhibitors. 6-gingerol and diacetyl-6-gingerol molecules showed antimicrobial activity against S. pneumoniae and S. agalactia.
