Abstract (EN)

In today's life, human beings need to meet their food needs in order to increase their quality of life and survive, and while meeting this need, importance is given to safe food production. If the food product is produced by considering all food safety standards and does not pose a danger to human health, the food product produced is considered safe. In this context, there are some worldwide accepted standards and practices. ISO 22000 standards and food safety principles during sales and production are known as globally accepted tools used to ensure food safety in the process. Tea, known as the second most consumed liquid food in the world, is grown in humid climates. The emergence of tea work, unemployment of people after the First World War and the fact that the people living in the region were able to continue their lives, pushed them to find a source of income. Today, the most suitable region for the cultivation of tea plant is known as the Eastern Black Sea Region. In addition to its contribution to the country's economy, it has an important place and has been recorded as a first class tea region. Different types of tea plant emerge according to the way they are processed, and these are green tea, black tea, oolong tea, etc. species multiply according to their processing methods. Since it is the second liquid that people consume after water, it is of great importance in terms of food safety and standards while producing and growing. Food safety and standards applied in production both ensure that the product comes out safely without interrupting production, and it ensures that the consumer consumes the product safely without worry.
