Abstract (EN)

This thesis study was carried out in the quince garden located in Oruçlu (village) neighborhood of Pamukova district of Sakarya and in Horticulture Department of Faculty of Agriculture, Akdeniz University in 2017. In this study, phenological observations, pomological investigations and chemical analyzes of Eşme ayva (Cydonia oblonga Mill.) were investigated. Geographical directions and width and height measurements of the tree were made in 10 fruit samples from 4 trees and 19 fruit trees from 19 May 2017 until 19 October 2017. At the time of the measurements, 10 fruit samples were taken from the garden every 10 days and pomological investigations were made and chemical contents were examined. Fruits were taken from 19 May 2017 and continued until 29 November 2017. During this period, the pH of the fruits, the amount of titratable acidity (TEA), the amount of water-soluble dry matter (TSS), total phenol content and total karatenoid contents were examined. At the end of the study, the amount of water-soluble dry matter was not significantly changed in the fruit samples in the specified dates, while the amount of titratable acidity increased in the period from the first sample to harvest and decreased after the decay. The pH values showed that the fruits fell to harvest and started to rise again harvest.
