Abstract (EN)

As of the location where Turkey has very favorable opportunities for the production of fruit in terms of soil and climate characteristics. Many fruit species are grown in our country every season. Among these fruit species, apple has an important production amount. According to 2017 data, apple production is known to reach 3.032.164 tons. When the amount of production of apple export can not be ignored contribution to Turkey's economy and harvested cold storage method for all of the apples can not be consumed simultaneously becomes important at this stage. It is also important to keep the harvested apples in the cold until they are delivered to the consumer. In this study, the effects of preservation procedures at different temperatures were compared and the best method was determined for some criteria. 4 different temperature apple storage processes were carried out at 2 ° C, refrigerator 4 ° C, air conditioner 10 ° C and control 19.68 ° C and 56.36% (room conditions). In the study, mathematical modeling, fruit meat hardness, weight loss, color measurements and chemical properties (TSS, pH, TA) were determined. In addition, field changes of apples were calculated with Labview. According to the results of the study, the highest weight loss was determined as control (room conditions) and the least loss was found at 2 ° C. The best results among the mathematical models are Polynomial; Cubic equation. When the color values were examined, the nearest value to the fresh product was determined at 2 ° C. When the temperature parameters were compared according to the data, it was determined that the best storage temperature was 2 ° C.
