Abstract (EN)

It is known that secondary metabolites in plants are affected by many parameters under biotic and abiotic stress conditions and can vary in quantity. This thesis study was carried out to determine the effects of sorbitol applications at different doses at different periods (pre flowering, flowering period, after flowering) by spraying from the leaves on total phenolic, total flavonoid and antioxidant activities in Safflower (Carthamus tinctorius L.). The study was carried out for one year in the greenhouse area in the Suluova Vocational School Campus of Amasya University. Olein variety was used as the material in the study. In the experiment, five different sorbitol doses (0,5 g/L, 25 g/L, 50 g/L, 100 g/L) were applied by foliar spraying. Sorbitol doses were applied at three different growth stages (pre flowering, flowering period, after flowering). After the harvest was completed, the total phenolic substance content, total flavonoid substance content and DPPH free radical scavenging activity of the drugs obtained from all samples were examined. It was observed that the effects of increasing sorbitol doses applied in different growth periods and total phenolic total flavonoid substance amount and DPPH free radical scavenging activity were statistically insignificant. However, the interaction of sorbitol doses x different development periods in total phenolic substance content was significant. In safflower (Carthamus tinctorius L.), the highest total phenolic content was determined as 133,00 mg GAE/g in the pre-flowering period. The highest total flavonoid substance content was determined as 24,46 mg QE/g in the pre-flowering period of the plant. The highest DPPH free radical scavenging activity was determined as 92,86% in the after-flowering period of the plant. As a result, when we evaluate our study according to different development periods in safflower, we can rank the development periods for total phenolic substance content and total flavonoid substance amounts as pre flowering > flowering period > after flowering. On the other hand, we can list the antioxidant activity as after flowering > flowering period > pre flowering.
