Abstract (EN)
This study aims to thoroughly analyze how fermented foods can be incorporated into various dietary patterns. Rich in probiotics and prebiotics, these foods stand out for their ability to support digestive health, strengthen the immune system, and contribute positively to overall well-being. In contemporary nutrition trends such as the ketogenic diet, Mediterranean diet, Paleo diet, and intermittent fasting, fermented products are playing an increasingly significant role. However, integrating these items into dietary practices is influenced by numerous factors, including individual consumption habits, portion control, personal preferences, cultural norms, and levels of nutritional awareness. A qualitative research approach was adopted in this study, with data collected through semi-structured interviews. Insights gathered from experts in the field were analyzed using thematic analysis. The findings revealed that fermented foods generally align well with different diet models and offer numerous health benefits. Nevertheless, it is emphasized that their inclusion in nutritional routines should be more strategic, informed, and systematic. Key implementation suggestions highlighted in the results include portion recommendations, the preference for homemade and additive-free products, expanding product variety, and setting clear consumption limits. Looking ahead, it is anticipated that fermented foods will play a more prominent role in personalized nutrition plans, with innovations in food technology further diversifying the field. This thesis contributes to academic knowledge by addressing both the opportunities and challenges encountered in the integration of fermented foods into dietary systems, while also offering practical guidance for professionals in the field.
