Abstract (EN)
The fruits and buds of the caper plant, which grows in different regions in Turkey and can be grown spontaneously in many regions that are widely used in the field of health, are used as nutrients. Its high level of flavonoid content makes it widely used in the paint, food, cosmetics and pharmaceutical industries. In this study, a library search was performed in GC-MS using the clevenger system extraction method to obtain the volatile components of the aromatic medicinal plant, caper. hexanoic acid (caproic acid), octanoic acid (caprylic acid), decanoic acid (capric acid), dodecanoic acid (lauric acid), tetradecanoic acid (myristic acid), hexadecanoic acid (palmitic acid) and octadecanoic acid (stearic acid) from saturated and medium chain fatty acids by GC-MS) analyzed. The percentages of C, H, O, N, S, the basic elements of enzymatic reactions, which are the building blocks of organic substances in dry capers, buds and seeds, were measured with an elemental analyzer. For information on the structure of organic substances in capers, library scanning was performed with FTIR. The usage areas and chemical properties of each component obtained as a result of GC-MS and FTIR analysis in the health, food, cosmetics, industry and pharmaceutical sectors were examined. Macro and micro element scanning was performed in SEM-EDX. The ratios of K, Cl, S, Na, P, Mg, Zn, Al, Ca and Fe elements in dried capers, buds and seeds were compared. The effects of deficiency and excess of these elements on health were investigated. Keywords: Caper, volatile component, GC-MS, FTIR, SEM-EDX
