Abstract (EN)
Grape belongs to Vitaceae family, (Vitis vinifera L.) that has high nutritive value and one of the products, providing important contribution to agriculture and economy of Manisa province and Turkey. Geographical position of Manisa Province is close to sea level and existing in different altitudes where can be grown grape agriculture in each of altitudes. In the research, two different levels of elevation were carried out in Manisa city center Horozköy (75 m) and Sarıgöl (650 m) supplied with grape varieties; Red Globe, Michele Palieri, Crimson Seedless and Alphonse Lavallee. In the scope of the project, it has been determined that there is a change in quality characteristics at two different altitudes for varities of black grape, and sometimes it does not cause change. The main grape quality criteria investigated were; Total phenolic substance (TPS), Color Measurements, Grain Handle Fracture and Grain Hardness, Grain Weight, Bunch Envelope Width, Grain Length and Size Measurements, Water Soluble Dry Matter, Titratable Acid (g / L), pH, Data SAS The differences between the samples evaluated in the statistical program were evaluated in multiple directions. The grape varieties studied showed different values in the parameters studied at two different altitudes, while the statistical results were similar. When evaluated Alphonse Lavallèe grape variety of grain width, grain size and grain weight characteristics, As the altitude increases, it is seen that there is no change in the other physical properties. Alphonse Lavallee grape varities showed that the amount of water-soluble dry matter and the pH value decreased as the altitude increased, the amount of titratable acid and the total amount of phenolic substances increased. In Crimson Seedless grape varieties, it is determined that there is an increase as the width of the grain increases and the hardness decreases as the height increases and there is no change in the other values. On the other hand, the amount of water-soluble dry matter, pH and total phenolic content increased as the altitude increased and the acid value remained the same. In the evaluation made in the variety of Michele Palieri grape variety, it was observed that there was an increasing change in the height of the bunch height and grain hardness, while the decrease in the bunch width, grain size and grain weight were determined. This grape variety increased with the increase in the rate of titratable acid altitude, while the amount of water-soluble dry matter decreased. The pH and total phenolic contents of the same grape varieties did not change due to altitude. Red Globe grape varieties have increased bunch width, bunch length, shear force and grain weight at high altitude. It was established a decrease in the height of the grain at high altitude. In addition, depending on the altitude of the shear breaking force in 4 types used as material within the scope of the project, only this type of change was determined in the Red Globe variety. It was indicated that in Red Globe a decrease in the amount of water, dry matter, pH and total phenolic content at high altitude and increased titratable acidity. L*, hue, a*, b* and chroma reduction, increase or the same values were determined in grape varieties supplied at two different altitudes in the determined color measurements. All investigated quality parameters were evaluated by Duncan statistical analysis. Generally, İnvestigated date of the physical, chemical and biochemical can be changed at two different altitudes.
