Abstract (EN)

Investigation of Some Antioxidants and Ghreline Amount in Pasteurized Milk Based on Time DependencyMilk and milk products are the most important food items for feeding of the living. In this study, five common different brands were analyzed and were investigated packeged milk depending on the shelf life, both fresh uncooked milk and boiled milk the amount of change of antioxidant vitamins and hormone ghreline. This milks were collected for a total period of 6 months with one-month periods beginning from date of manufacture. Later, amounts of A, E and C vitamins with acylated and desacylated forms of ghreline hormone were analyzed with HPLC.The packaged milks were determined the highest amounts of A, E and C vitamins with acylated and desacylated forms of ghreline hormone respectively 1,87±0,25 µg/mL; 1,79±1,23 µg/mL; 23,66±2,25 µg/mL; 5,84±0,56 pg/mL; 220,27±1,64 pg/mL in the first month of production. In the same way, that milks were observed the lowest amounts of A, E and C vitamins with acylated and desacylated forms of ghreline hormone respectively 1,87±0,25 µg/mL; 1,79±1,23 µg/mL; 23,66±2,25 µg/mL; 5,84±0,56 pg/mL; 220,27±1,64 pg/mL in the sixth month of production.The fresh uncooked milks were determined the amounts of A, E and C vitamins with acylated and desacylated forms of ghreline hormone respectively 1,54±0,38 µg/mL; 3,58±0,76 µg/mL; 14,13±1,34 µg/mL; 5,06±0,86 pg/mL; 226,11±9,09 pg/mL while the boiled milks were determined respectively 0,97±0,12 µg/mL; 2,92±0,71 µg/mL; 6,88±1,13 µg/mL; 1,80±0,37 pg/mL; 101,95±6,19 pg/mL.In the packaged milks of all brands were determined to decrease over time amounts of A, E and C vitamins with acylated and desacylated forms of ghreline hormone depending on the shelf life of milk. It was observed that the fresh uncooked milks had higher amounts than the packaged milks in terms of the vitamin and ghreline hormone, while the the boiled milks had lower amounts.Key Words : Milk, Ghreline hormone, Vitamin A, Vitamin E, Vitamin C
