Abstract (EN)
As the positive effects of squalene, which was first found in shark liver in 1906, on human health has been discovered, research on this topic became more popular. Since squalene is present in most vegetable oils, especially in olive oil, we were eager to do this research.The most commonly consumed vegetable oil types in our country are olive, sunflower, soybean, colza and corn oils. In this study, the amount of squalene was analysed in those oils and compared between the crude oils and consecutive steps of refining process.The data obtained from the analysis show that, squalene content reduce as an effect of refining process. The effect of refining process on the amount of squalene in vegetable oils was found to be important statistically.
