Abstract (EN)
In this study, effect of refining steps on 3, monochloroprophan 1.2 diol (3-MCPD) esters and glycidol ester formation in olive oil, palm oil and seed oils has been studied. For this purpose, samples have been collected before refining, and at exits of degumming, bleaching and deodorization. The samples were obtained from two olive oil and two palm oil refining plants in order to examine the differences arising from the operating conditions and the raw material quality. Moreover samples of sunflower oil and corn oil were also taken from one oil refinery to represent seed oils. Total amount of 3-MCPD and glycidol esters has been analysed by using standard method of German Society for Fat Science (DGF) C VI 17(10) via gas chromatography mass spectrometer (GC-MS) for the samples which collected throughout the study. Data obtained were evaluated by analysis of variance (ANOVA) and the effect of refining steps on formation of 3-MCPD and glycidol esters were investigated.
