Özet (EN)

In this research the effects of different postharvest treatments on quality of ?Red Globe? table grape variety which has superior taste and quality properties and great marketing potential during storage were carried out. In this context ultraviolet light (UV-C) for 2.5 and 5 minutes, menthol and thymol with 0.05% and 0.1% application doses and sodium metabisulphide based pads that frequently used in commercial grape storage were treated on harvested berries. In addition fruits without any treatment were evaluated as control. Treated grapes were stored at 0°C- 1°C temperature and 85%- 90% relative humidity conditions for 45 and 90 days respectively. Fruits were kept at 18°C-20°C conditions for 3 days after each storage period as shelf life. Some quality parameters were assessed after harvest and each storage period. These parameters were soluble solids concentration, titratable acidity, pH value, flesh color, total phenolic compounds, the rate of decay and the rate of stem browning. According to the results fruit quality was reduced by prolonging the storage period. Furthermore, the most successful treatments were end of 90 days, sodium methabisulphide, menthol with %0,1 application dose and UV-C treatment for 5 minutes as keeping the quality during storage. The quality couldn?t be kept by the other treatments moreover spoilage was occurred on fruit taste properties.
