Abstract (EN)
In this study, it is aimed to determine what kind of change will be achieved with the grading of the carcass in the S/EUROP system, how much difference will be made by the pricing depending on the rating to be applied in the near future, and to form a resource for the future commercial and academic studies of the related sector and its employees. In the research, the data obtained by evaluating the carcasses of cattle slaughtered in Edirne Meat and Meat Products Integrated Facilities Industry and Trade Incorporation and the information about the slaughter prices determined by the Edirne Commodity Exchange were used. In the study, 8115 cattle carcass records were used. In this study, in determining the effect of the factors showing class variation and the ratios of the examined environmental effects within the general variation, the multidimensional classified tables of the existing data were utilized and the effect shares of the factors on the yields were determined with the least squares means (LSM) method. In comparing the average values of yield characteristics between groups determined as impact factors and the significance checks of the differences between these groups were made with the Duncan test, and the significance checks of the comparisons between the minimum squares averages calculated according to the impact factors were made with the contrast test. In the statistical analysis of the data, it was assumed that there was no significant interaction between the factors examined and the equation systems with multiple unknowns established according to the prepared models were solved using the General Linear Models (GLM) procedure. The majority of the carcasses used in the study consisted of Holstein and its crossbreeds (52.40%), Simmental and its crossbreeds (30.87%), Brown Swiss and its crossbreeds (11.12%). In the research, the average carcass weight was determined as 312.69 kg. The effects of race, slaughter month, carcass group and S/EUROP conformation group, whose effects were examined on carcass weight, were found to be statistically significant (P<0.001). According to the S/EUROP conformation system, the carcasses were mostly in the "O" (35.72%) and "R" (45.48%) categories, and in the "2" and "3" groups according to their fatness rates. The average S/EUROP (1-15) value was calculated as 6.608 and the fatness (1-5) value was 2.685. It was found that the price to be paid for classified carcasses could be 14.49% more. In conclusion, the implementation of the S/EUROP classification system is important within the framework of EU harmonization, as well as will contribute to the marketing of quality carcasses and commercially for grassroots breeders.
