Eggs market in Turkey and a characteristic price model estimation

Abstract (EN)

This study aims to analyze the supply-demand, price formation and competition situation in the egg market in Turkey, since the egg market in Turkey has a dynamic structure and egg prices fluctuate between years, and to estimate the effect of product characteristics on egg price with the hedonic price model. For this purpose, the relationship between product features and price in the egg market was analyzed with the hedonic price model, using the data obtained from the sales points of chain markets in different formats in the central districts of Antalya in the period of January-March 2019. As a result of the analysis, it was revealed that the product characteristics of the egg have a significant effect on the retail prices of eggs. It has been determined that the main features that positively affect the retail price of eggs are egg size, omega-3 enrichment, free-range eggs, organic egg features and package appearance. The findings show that the retail price of eggs is affected by certain characteristics of eggs, which are indicators of quality.
