Abstract (EN)

The major purpose of this thesis was to determine behaviors of households residing in İpekyolu Town of Van Province towards bread consumption. The data belongs to 2016 year and was collected from 269 households determined by sample size for limited population. Taste and flavour, quality, softness and nutritional value factors were effective in behaviour of consumers with 40.15, 43.49, 26.39 and 19.70 %, respectively, when buying bread. In terms of the place where the bread is bought, the average of the Likert scale of cleaning, proximity to residing home and quality factors were 3.71, 3.40, 3.26, respectively, which means that consumers take these factors into consideration greatly. Daily bread consumption per capita was 382.80 grams and 29.37 % of households preferred consuming bread as white loaf and 21.56 % as whole wheat. Nearly half of the consumers (47.58%) did not waste any bread. The rate of consumers, who wasted the bread occasionally and continuously was 41.01% and 10.41%, respectively. More than two-third of the consumers (66.17%) thought that the purchase of surplus bread caused a waste of bread.
