Application of lean production techniques in processimprovement in the food industry

In this thesis, production efficiency is discussed in the when the data of the last 2 years were examined, the 2.1% efficiency loss was examined under the spotlight in the thesis. It is aimed to examine the losses examined in the value stream mapping technique in depth using detailed analysis methods, to identify the correct root causes and to determine solution methods. In this context, sample process data were processed into gantt chart, one of the detailed analysis methods, and the results were detailed in the findings section. All data of the root causes identified in the Gantt chart were transferred to minitab and the results were interpreted. These data were examined using the A3 problem solving technique, one of the detailed analysis methods subject to the research, and the data were shared in detail in the findings section. In order to ensure the sustainability, follow-up and comprehensibility of this entire study, independent of individuals, by enriching it with simple and visual management, data was tracked through the powerBI system.
