Abstract (EN)

The samples that comprise the content of this thesis have been determined as a result of literature study conducted that they are being used widely in food, cosmetic, pharmaceutical industry and healthcare. Due to the application areas they are sterilized to preserve the properties of the product. They are exposed to high-energy radiation by radiosterilization which is have numereous advantages compared to other sterilization methods. In this context, the types and structures of the radiation induced radical or radicals in the studied samples and their sensitivities were examined by ESR technique. In this thesis, the structures of the free radicals induced by radiation in food samples (flax seed, white cherry stone) and pharmaceutical active ingredients (primidone, chlorpromazine, imipramine, and nortriptyline) used in neurological diseases were determined by simulation technique and the dosimetric features of these radicals have been examined using ESR spectroscopy. The spectral parameters of the proposed free radicals for each sample have been determined by simulations. For each sample, the microwave-saturation behaviour, the dose-response curve and the signal fading were constructed for each samples. All food samples exhibited an ESR singlet before irradiation treatment. However, no ESR signal were observed in the case of drug samples.
