Abstract (EN)
This study, empirically analyzes the long-term efficiency of cash-management, which takes an important place in enterprises, over the financial structure of cash management processes in food industry through cash assets and liabilities. Enterprises constantly restructure their cash management processes, take cost-minimizing precautions, and hereby try to generate projects oriented for increasing their sales income. With the effect of global crisis, cash management is of vital importance in this sense. Many such points as steady sales income that enterprises earn to recover their cash and liquidity management, the collection of their receivables, stock period, and discharge of liabilities affect the liquidity performance. Liquidity, operating, and profitability analyses of the food industry was carried out by using the data for the period 2014-2015 which were taken from the financial statements of the firms traded in BIST. The results of the study show that the liquidity management in the food industry satisfy the financial liabilities of cash assets. From the point of operating management, operating structure is strong since the average collection period of receivables and the average duration of inventory consumed are short. Total assets could satisfy the total liabilities. It is also found out that gross profit margin is sufficient but operating and net profit margin are not. In the light of all analyses, it is concluded that food industry faces a great number of structural problems. Key Words :Cash and Liquidite Management, Food Industry, Sector Analysis
