Abstract (EN)

One of the most emphasized issues of recent years is consumption of nutritionally rich foods having high antioxidant substances that support healthy life. Due to their antimicrobial effects, phenolic compounds used in the treatment of a wide range of diseases have a health-promoting effect. For this reason, the production of extracts from grapevine varieties having high phenolic compounds that are used in medicine, food supplements and cosmetics is of great importance for health and economy. Grapevine leaves are known to be rich in phenolic compounds. On the other hand, it is a fact that the grapevine leaves are not used efficiently and are considered as waste. Phenolic compounds of Burdur Dimriti, Siyah Gemre, Razakı and Tilki Kuyruğu varieties grown in Isparta province were determined in leaves collected after post-harvest. Results showed that phenolic compound of leaves varied among grapevine varieties. Total phenolic content varied between 3.25-7.38 mg g-1 CE and total flavanol amount varied between 67.66 and 120.24 mg g-1 CE. Results showed that gallic acid, catechin, epicatechin, caffeic acid, chlorogenic acid, ferulic acid, rutin, quarsetin, p-coumaric acid in grapevine leaves varied among varieties.
