The origins of tradesman in Ottoman society depends on previous Turkish-Islamic states. This widespread organization in the Ottoman city life is in fact accepted as a continuation of the "ahi movement" in the XIII-XIV centuries. The tradesman organization, which is an example of the similar organization of community groups with common ideals and interests in the Ottoman society, is a common system that includes all urban population, except for military groups. This organization, in addition to its importance in the management and economy of the city, has been the basis for the social and life workers of art and trade and transportation and service workers. The most important institution supporting the economy of the Ottoman Empire and meeting the needs of the people was the tradesman which called Şekerci. The Şekerci and other groups of tradesmen, who had great importance in the Ottoman economy and especially in the economy of Istanbul, were counted by the state. The obtained counting data was recorded in the Trades Counting Book. In addition, in the Ottoman Empire, the sugar that first appeared in India and was used extensively by the Ottoman palace and its subjects in the later periods was of great importance in terms of production and consumption in the 19th century.
