Β-glucan and resistant starch content of some hull-less barley genotypes

Abstract (EN)

Barley (Hordeum vulgare L.) is one of the most important grains in the world. Barley is the second most important grain produced in Turkey after wheat. It has been stated that barley can be used as a dietary fibre due to its crude protein, dietary fibre, resistant starch and especially high β-glucan content, and the possibilities of its use in various fields of the food industry have begun to be investigated. In addition to β-glucan, the fact that barley is rich in protein, starch and B vitamins increases the potential use of barley-based products. In this study, 2 hulled (Akhisar-98, Hilal) and 12 hull-less (Güldeste, InbonH1-46, Övd3-108, InbonH1-25, InbonH1-49, Övd3-115, Övd3-103, Övd3-106, InbonH1-6, InbonH1-3, Övd3-124 and Özen), 4 varieties (Güldeste, Hilal, Akhisar-98 and Özen), 10 forward lines (InbonH1-46, Övd3-108, InbonH1-25, InbonH1 -49, Övd3-115, Övd3-103, Övd3-106, InbonH1-6, InbonH1-3 and Övd3-124) and 3 of them (Övd3-108, Hilal and Özen) in two rows, 11 of them (Güldeste, InbonH1-46, InbonH1 -25, InbonH1-49, Övd3-115, Övd3-103, Övd3-106, InbonH1-6, InbonH1-3, Övd3-124 and Akhisar-98) six-row barley materials of 14 different genotypes were used. NIRS (moisture, crude protein, crude fibre, crude oil, ash and starch), β-glucan and resistant starch analyses were performed on barley genotypes. Hulled barley samples analysed; moisture content %11.46-11.57, crude protein rate %14.37-16.11, crude fibre rate %0.07-5.72, crude oil rate %1.17-1.57, ash rate %1.46-1.69, starch rate %46.5-69.93, β-glucan ratio was found to be between %4.90-5.31 and resistant starch ratio between %6.72-6.90. In hull-less barley genotypes; The moisture content is %10.22-13.73, the crude protein rate is %13.35-17.55, the crude fibre rate is %0.28-5.26, the crude oil rate is %1.16-2.91, the ash rate is %0.15-1.98, the starch rate is %57.63-71.51, β-glucan It was determined that the ratio of between %2.89-5.84 and the ratio of resistant starch was between %6.38-8.11. According to the results obtained, it was determined that especially the β-glucan and resistant starch ratios were higher in the hull-less barley samples than in the hulled barley samples.
