Özet (EN)

In this thesis the growth and development situations of nectarine species, `Morsiani 51? and `Caldesi 85? which are produced commonly in recent years, have superior quality and taste properties have been examined in Çanakkale where the nectarine is most produced in Turkey.In this work firstly the fruits which will be used for measurements to obtain original growing lines have signed after fruit formation. Diameters and lengths of those fruits have measured with an interval of 7 days and the obtained values have been noted. On the samples which have taken at the times close to harvest maturity the quality parameters (fruit weight, flesh color, flesh firmness, soluble solids concentration, titrable acidity) are determined in the laboratory. Determining performances and the most appropriate harvest times of species in question are aimed as a result of this work.The values at the most appropriate harvest times; fruit diameter 67 mm, fruit length 70 mm, fruit weight 187 g, flesh color (L*a*b* ):(55, 23, 41), flesh firmness 3.4 kg, soluble solids concentration %12 , titrable acidity 12 g/100g for Morsiani 51 and fruit diameter 73 mm, fruit length 72 mm, fruit weight 212 g, flesh color (L*a*b* ): (61,26,42), flesh firmness 6.3 kg , soluble solids concentration %12, titrable acidity 15 g/100g for Caldesi 85 have been determined. Taking into account the values for 2010 for the most appropriate harvest time for Morsiani 51 is the second week of August and for Caldesi 85 is third week of September as a result.
