Özet (EN)

This study was carried out to determine the usage possibilities of olive pomace as growing medium (substrate) for cultivation of enoki mushroom (Flammulina velutipes) in bottle culture. Two F. velutipes isolates (FV008-white isolate originating from South Korea and FV010-yellow isolate originating from China) were used in the study. In the study, 10 substrates prepared from different ratios of beech sawdust (BS) and olive pomace (OP) used as main material and rice bran (RB) used as an additive material were discussed. To determine the effects of substrates on mycelial growth, yield, and mushroom quality, 15 properties were examined. According to the research findings, it was determined that there are significant differences among the substrates in terms of examined properties. Yield and biological efficiency values in FV008 isolate varied between 79.41-127.72 g/kg and 19.29-27.37%, respectively, and between 79.54-198.12 g/kg and 18.68-48.12% in FV010 isolate. It was determined that olive pomace can be used as substrate for cultivation of F. velutipes. It was concluded that substrates numbered 7 (10BS+20RB+70OP) and 8 (20RB+80OP) for FV008 isolate and substrates numbered 1 (70BS+20RB+10OP) and 2 (60BS+20RB+20OP) for FV010 isolate gave better results in terms of yield and could be recommended for cultivation.
