Abstract (EN)
Slow Food; It appears as good, clean and fair food. It is defined as fresh-smelling seasonal foods that are part of the good local culture and satisfy the senses. Clean; It is defined as the production and consumption of food that does not endanger the environment, animals and human health, and if it is fair, accessible prices for consumers and fair conditions and wages for producers. In this study, to reveal the philosophy, principles, historical development and structure of the Slow Food movement in the world and in Turkey; It is aimed to examine the formation of the Tarsus Earth Market, which is a part of the Slow Food movement, in terms of producer and consumer. For this purpose, individual interviews were conducted with a total of 70 people, including 30 producers and 40 consumers. According to the findings of the research, the Slow Food Movement and the Earth Market are met with interest by producers and consumers. However, both producers and consumers do not have much information on the subject. Producers in the market (the purpose of the market, features, etc.) doesn't have enough knowledge about the subject. Especially at the consumer level, while the products are mostly preferred because they contain clean ingredients, they are also criticized for being expensive. This situation poses a threat to the sustainability of the market. For this reason, awareness studies should be carried out in terms of producer and consumer dimensions, and it should be ensured that the market reaches more people and is sustainable.
