Özet (EN)

A fragrance is a blend of diverse volatile organic compounds that can be perceived through the olfactory sense. These VOC mixtures find frequent application in a wide range of consumer goods (perfumes, cosmetics, laundry detergents, cleaning agents). Fragrance compounds encompass both simple and complex substances utilized in the fragrance industry. Various N,S-heterocyclic compounds find application in this field. Sulfur-containing molecules are particularly known for their potent odors and their odorants are present in various fruits, essential oils, and resins. Thiazolines and thiazoles, which contain both S and N atoms in their structures, hold significant importance in the fragrance and flavor industry. Both thiazoles and thiazolines impart sulfurous or earthy nuances to the fragrances they are employed in. Their aromatic characteristics and capacity to enhance complex scent profiles make them useful in the fragrance industry. In this thesis, we focused on the synthesis of some new substituted thiazoline- and thiazole-4-carboxylates (78,79). Therefore, variety of thiazoline-4-carboxylates (78a-k) were synthesized using very effective methodology which contains multistep transformations starting from fragrant aldehydes giving nitriles, then their imino ethers (imidates) and the condensations of imidates with (L)-cysteine methyl ester. Finally, thiazoles (79a-j) were obtained by a simple but effective oxidation reaction. All the target compounds (78,79) were characterized by means of FTIR, NMR and HRMS analyses. Besides, olfactory tests of the compounds were performed by some expert noses.
